Week of Meals Aug 18th - 24th

My Fabulous Chef Salad (yes there is lettuce under all that)

Day 1 - 2 Sauce Lasagna Bowls from Rachel Ray (http://www.foodnetwork.com/recipes/two-sauce-weeknight-lasagna-bowls-recipe/index.html)

Day 2 - Pork Tenderloin
             Roasted Potatoes
             Green Beans

Day 3 - Hamhock & Beans
             Fried Potatoes
             Corn Bread

Day 4 - Home made Chicken Noodle Soup
             Home made Biscuits

Day 5 - Sheppard's Pie (see recipe below)

Day 6 - Chef Salad served with fresh Ranch Dressing (see pic above)

Day 7 - Talapia
             Broccoli and cheddar rice
             Steamed Broccoli

Sheppard's Pie

Ingredients:
1 small or half a med. onion - diced
3 carrots peeled and diced
2 tablespoons oil
1 lb ground beef or turkey
salt and pepper
4 cups prepared mashed potatoes (instant if fine)
2 cups frozen corn
1 cup shredded cheddar cheese

Directions:
Preheat oven to 400 degrees.
In oven safe skillet heat oil, then add onion and carrots.  Let saute for about 2 minutes.  Add ground meat.  Season with salt and pepper.  Break up meat as it cooks.  After meat is completely cooked drain if needed and then place meat and veggies on plate and set aside.  In same skillet spread the mashed potatoes in an even layer, return meat and spread evenly, then the corn, and top with cheese.
Place skillet in oven and bake for about 30 minutes or until cheese is melted and golden.
Serves about six people.

Meal Planning June 29-July 5th

This week I only have 6 meals laid out for our weekly menu.  Plans are still not in stone about what we are doing on July 4th therefore I did not plan a meal.  If we end up BBQing then we will probably purchase the meat for that on Sunday so it will be fresh.  Happy 4th of July to everyone and may everyone remember the true reason for our celebration instead of enjoying just another day off.

Day 1 - Spaghetti
            Cesar Salad

Day 2 - Shepherd's Pie
             This is a very cheap an easy meal.  Layer in a casserole dish: prepared mashed potatoes, browned hamburger meat (or ground turkey), regular corn (some people use creamed corn but husband is not a fan), and sprinkle with cheese.  Preheat oven to 400 degrees.  Bake for 20-25 minutes, until the cheese is super melty or in my families case a little brown on top.

Day 3 - Chili Dogs (my favorite family stand by meal for busy nights)

Day 4 - Baked Talapia
             Lipton Broccoli and Cheddar Rice
             Steamed Broccoli

Day 5 - Balsamic Chicken (Use thin boneless skinless chicken breasts, sprinkled with a little balsamic vinegar, some salt and pepper, and flour in a hot skillet in about 2 tablespoons of olive oil place the chicken.  Cook chicken on each side about 5 minutes each or until completely cooked through)
             Served with:
             Corn on the Cob
             Mashed Potatoes

Day 6 - Brawts and Sour kraut
            Potato Salad

Meal Planning June 23-28

Time to take advantage of the crock pot and BBQ cause it is hot! 

Day 1 - Having company over so we are making a Grill Platter.
Grilling up thin chicken breasts, eggplant, onion, plum tomato halves, zucchini, and some thick slices of  bread.  Serving it with Cesar Salad, black olives and a Feta Vinaigrette.

Day 2 - Frizzled Egg Spinach Salad
This is a new recipe I'm trying, I'll let you know how it goes next week and post the recipe if it is good.

Day 3 - Chicken & Bean Stew

Day 4 - Hamburgers and Potato Salad

Day 5 - Grilled Hamsteaks, Green beans, & Mashed Potatoes

Day 6 - Pork Roast with veggies from the crockpot

Meal Planning May 12-19

Well this week it is back to the regular schedule of dinner making.  I enjoyed my "days off" from cooking but also look forward to preparing some really good for us meals.  It seems this week I really had a block on what to put on the menu this week.  But I did it, a full weeks of healthy meals, okay all but one as you shall see below.

Salmon with Chickpea Ragu
(From Ellie Krieger’s So Easy)
Ingredients
1 tablespoon olive oil
1 small onion, chopped
1 large carrot, peeled and diced
1 large zucchini, diced
2 cloves garlic, minced
2 tablespoons tomato paste
4 cups low-sodium vegetable broth
1 (15.5 oz.) can chickpeas, drained and rinsed
1 cup basil leaves, sliced into ribbons, plus more for garnish
½ teaspoon salt
                                   ½ teaspoon freshly ground black pepper
                                   4 (6 oz.) skinless salmon fillets

Directions
Heat oil in a large skillet over medium-high heat, add the onion, and cook until soft and translucent, about 3 minutes. Add the carrot, zucchini, and garlic and cook, stirring, until the carrots are firm-tender, 4 to 5 minutes. Add the tomato paste, stirring to incorporate completely. Add the chicken broth and chickpeas and bring to a boil. Reduce the heat to low and cook, covered, until the liquid thickens slightly, 8 to 10 minutes.

Remove the skillet from the heat, and add 1 cup of the basil and ¼ teaspoon each of salt and pepper (and crushed red pepper flakes, if using), and stir to incorporate. Cover to keep warm while you cook the salmon.

Preheat the broiler. Season the salmon with the remaining ¼ teaspoon each of salt and pepper. Broil the salmon for 8 to 10 minutes per inch thickness, turning once.

To serve, spoon 1 ½ cups of the chickpea ragu into a shallow bowl or rimmed plate. Top with a fillet of salmon and garnish with the ribbons of basil.

 Grits and Grillades (I believe I pulled this from a Woman's Day issue this past year)

1/2 cup all purpose flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 1/2 pounds top round steak, cut into 3 inch pieces
3 tablespoons olive oil
1 medium onion
1 red bell pepper
1 cup chopped celery
3 cloves garlic minced
1 teaspoon dried thyme
1/4 teaspoon dried basil
2 bay leaves
2 cups beef broth
1/2 cup red wine (I actually use more broth and add a tablespoon of red wine vinegar as we don't buy wine)
Cheese Grits (recipe follows)
Garnish: chopped green onion

In a shallow dish, combine flour, salt and pepper.  Add steak, tossing gently to coat.
In a medium Dutch oven, heat oil over medium high heat.  Add steak, and cook for 5 to 6 minutes, or until browned.  Remove from pan, and set aside.  Add onion, bell pepper, celery, garlic, thyme, basil, and bay leaves.  Cook for 5 to 6 minutes, stirring frequently, or until vegetables are tender.  Return beef to pan; stir in beef broth and wine.  Bring to boil; cover, reduce heat, and simmer for 1 hour, or until beef is tender.  Uncover and simmer for 30 minutes longer.  Remove, and discard bay leaves.  Serve over Cheese Grits.  Garnish with green onion, if desired.

Cheese Grits

2 cups low-sodium chicken broth
1 clove garlic, minced
1/2 cup old-fashioned grits
3/4 cup of shredded sharp cheddar
2 tablespoons butter
1/8 teaspoon red pepper

In a medium saucepan, combine broth and garlic.  Bring to a boil over medium-high heat.  Slowly stir in grits; reduce heat to low and cook until grits are tender, stirring constantly, about 15 minutes.  Remove from heat, and stir in cheese, butter, and pepper.

Meal Planning May 5-11


Okay this next week my hubby will be out of town for 4 nights so I'm giving myself a pass to make some super easy meals this week.

Day 1 - Two Sauce Weeknight Lasagna Bowls
I use Rachel Ray's recipe for this and I LOVE it!

Day 2 - Grilled Cheese Sandwiches with tomato soup
Day 3 - Shrimp tossed with lemon pasta
Side salad
***saute`e shrimp in olive oil and lemon zest...remove add a pat of butter, the juice of
a lemon, a tsp of garlic, if you want a creamy consistency add a little milk or cream at
the very end. toss with the pasta and garlic.
Day 4 - Chili Dogs
Day 5 - Chinese Chicken Noodle Salad (from my freezer, recipe was posted earlier this year)
Day 6 - Pork Roast with vegetables (this was carried over from this past week)
Day 7 - Honey/Ginger Talapia
Fried Rice (well sorta)
Steamed Broccoli
***in a plastic bag marinate talapia in 1/4 cup honey, 1/4 cup lime juice, and 1 tablespoon
grated ginger for 1 hour (not more than because the lime juice can start cooking your
fish). Remove fish and season. Grill or broil till done.
***for the rice, prepare 2 cups of rice with packaging directions, but instead of
using water, use chicken broth. In a separate non-stick
skillet heat canola oil, in a small bowl beat two eggs, pour into hot pan and scramble for a
minute, add rice and mix together. Season rice with soy sauce (low sodium is best), green
onion, and salt and pepper if needed.

Meal Planning April 28th - May 4th


Day 1
BBQ Pork Sandwiches
-put a pork roast in a crock pot season with salt and pepper, pour your favorite BBQ sauce over the top simmer all day. Serve on hamburger buns.
With Cucumber Dill Salad. Whisk together about 1/4 cup of plain nonfat yogurt,
2 tsps of cider vinegar, 1 tsp of dried dill weed, salt and pepper to taste.
Day 2
Chicken and Dumplings

Day 3
Chicken Fajitas
Spanish Rice and Refried Beans
Day 4
Roast Vegetable Soup with whole wheat dinner rolls
Recipe has been posted previously
Day 5
Brined and Roasted Chicken Legs
Soak chicken in a mixture of 2 qrts of water, 1/2 cup brown sugar, 1/2 cup salt.
Then season and roast.
Serve with steamed broccoli and Roasted potatoes
Day 6

Slow Roasted Seasoned Ribs

Dinner Planner II

1 weeks worth of easy meals your family will love!

(3 cups of prepared egg noodles, combine 1lb cooked ground hamburger with 8 oz sour cream, 1 can cream of mushroom soup, salt and pepper to taste.)

4)Breaded Chicken Strips (homemade or from freezer section of grocery store)
Mashed Potatoes

5)Hamburger Helper (yeah, I can use a little helper sometimes!)

6)Chicken Alabam (recipe below)
Minute Rice
Broccoli
7)Broccoli Manicotti
Cesar Salad
(prepared manicotti noodles stuffed with ricotta cheese and bits of broccoli, top with spaghetti sauce and a sprinkle of Parmesan cheese and bake at 400 for 20 minutes)










Roasted Vegetable Soup

Ingredients:
1 cup cauliflower
1 cup broccoli
1 cup potatoes
1 cup carrots
1/2 cup onion
2 tablespoons minced garlic
2 tablespoons canola oil
3 cups chicken broth
3 tablespoons half and half
salt and pepper to taste
1 cup of small cubed chicken (optional)

Directions:
Preheat oven to 400 degrees. Place cut up vegetables on cookie sheet, toss them with the canola oil and salt and pepper. Roast vegetables for 30 minutes stirring once in middle of cooking time. Remove vegetables from oven and let cool for about ten minutes. Pour 1 cup of chicken broth in blender or food processor, then add roasted vegetables. Blend till pureed. Pour into large soup pot and add other 2 cups of chicken broth, mix thoroughly, until smooth. Add chicken if desired. Bring to desired temperature. Add half and half and mix again. If soup is too thick add more chicken broth to thin it out. Salt and pepper to taste.

Chicken Alabam

Ingredients:
3 pieces of chicken
1/2 tsp. paprika
dash of pepper
5 tbs. butter
1 cup chicken stock
1/4 tsp lemon juice
1/3 cup flour
1/2 tsp salt
dash of thyme
1/4 cup chopped onion
1/2 cup half and half

Directions:
Dredge chicken with mixture of flour, paprika, salt, pepper, and thyme. Brush with melted butter and brown in 3 tbs. of oil. Remove from pan.
In same pan saute onion in butter, stir in excess flour. Add broth, cook and stir until thickened. Add cream and cook until smooth, and thick. Add lemon juice and blend well. Pour sauce over chicken in 2 to 3 quart casserole, cover and bake 1 1/4 hrs. @ 325 degrees. Serve over cooked rice.
